We've gotten into a routine with our book reading. We always read before bed and then we frequently read before naps and at other times in the day to pass the time. At bedtime, I always say (in my head) we're going to read just 3 books, but it usually turns into 4 or 5.
Here's a typical lineup..
The Lady with the Alligator Purse - It's quick and has lots of repitition and I try to change up the little boy's name every time just to see if she's listening.
The Dr. Seuss trio - Again, these are quick books and Katie has most of The Foot Book memorized and helps us read it.
Madeline - This is actually one of my books from my childhood! There's some of my own scribbling inside the cover. It's kind of weird to hear Katie point out certain things in the book, like the Eiffel Tower and say "appendix", but she likes it.
The Kissing Hand - we read this over and over as we prepared to go back to preschool. Chester Raccoon is going to school and his mommy kisses his hand and tells him to hold it to his cheek to feel her love while he's at school. The other morning when I was headed to work, I told Katie I would miss her! She reached out her palm to me and said, "you can kiss my hand, mommy." Melted my heart.
Pete the Cat, I Love My White Shoes - we just got this book after a friend recommended it. It's funny and has a bunch of You Tube videos of kids singing the song from the book. Pete is walking in his white shoes and keeps stepping in things that turn his shoes different colors but Pete doesn't seem to care. But Katie does! She always asks, "Why he not walk on sidewalk like he mommy says." It cracks me up because there is no mommy in the story and Pete is so laid back and goes with the flow and Katie just wants him to follow rules!
The Baby Bible - another recommendation from a friend. It has Bible stories at around 5 sentences and each sentence has some sort of motion that goes with it. They're easy to remember and fun to act out. Her favorite one is Noah's Ark. She gets a little carried away making animal noises.
A few more favorites...
Duck in the Truck - this book has great rhymes and cute characters but I'm not so thrilled with the ending. The duck gets his truck stuck in the muck and enlists the help of a frog, a sheep, and a goat. They try lots of different ways to get him out and when he finally gets his truck unstuck, he leaves his friends stuck in the muck. So, we always have a bit of a talk after this one saying the duck wasn't very nice.
All By Myself - Who doesn't love Little Critter books? Everytime Katie asks for this one, I think she's saying she wants to read by herself and then I remember it's what the book is called. Gets me everytime!
Hairy Maclary from Donaldson's Dairy - My favorite book ever. My mom brought this book back from London last year. Our cousin from Australia who lives there told her this was a classic Australian children's book; one she had read to all her boys. However, I was told I had to read the book in an English or Australian accent. Challenge accepted! If I was reading at a children's story time, I would definitely pick this book. Next time you're over, ask me for a reading and I will oblige (I'm now thinking in my English accent as I type).
We're trying to branch out and start getting more books from the library to change up the rotation, so hit me with some suggestions!

Not sure what Caroline would say, but some of MY favorites are: Llama, Llama Red Pajama, I Aint Gonna Paint No More, Inch by Inch, Berenstain Bear books, Corduroy, Every Cowgirl Needs a Horse, Princesses Are Not Perfect, Silly Sally, Frances books, and a whole lot more!
I like the Gunslinger series from Stephen King. The Stand is a classic too.
Katie really is a bookworm, I hope she continues enjoying books so much! We have a few of the books on your list (you actually may have bought one or two of them for us!).

Amazon.com has Listmania where I've found some good ideas...I really just googled "books for 2 year old boys." I also looked at christianbook.com for some good ideas.
thought of a couple of more books we love. These are ones we checked out at the library and Caroline wanted to read them over and over and over and - you get it. My Garden, My Preschool, A Bushel and a Peck, and To Market To Market. I also love Frances books. Caroline could take 'em or leave 'em, but I love them - you know - Bread and Jam for Frances, etc.
oh - I just saw that I already put Frances books =) oops!
